Proper Care of your Venison is important!

Caring for the Venison you hunted so diligently for is important for your health and for the texture and flavor of the meat itself. With the warm weather we are experiencing during Bow Season your meat can begin to spoil within hours if not cooled quickly. To speed the cooling, hang the deer upside down in a shaded (not sunny) area, and prop open the chest cavity. Skin and butcher the meat into big chunks (quarter) and get it into a cooler or refrigerator. You can also pack the chest cavity with bags of ice to help keep the meat cool if you cannot do the butchering at this time.
In cool weather, it is okay to let the deer hang, but not for more than a few days. If it freezes, it will be hard to skin and butcher. Temps hovering around freezing may cause the meat to freeze and thaw repeatedly and that will toughen the meat.
Aging the venison is not really needed. It might improve the texture of steak or roast but the same result can be gotten by proper cooking. In uncontrolled conditions, it could make the taste worseĆ¢?? gamey even!
